SOLUTION: In my case, I'll be looking into creating a calendar in either sharepoint or a shared mailbox. This has nothing to do with the Outlook client, it has to do with Apple's Calendar client for macOS not showing Outlook shared calendars. If you have permissions to a shared mailbox, but have not been granted full access, then the shared mailbox will not automap to appear in your Outlook Folder.
